“make Polenta in under 4 minutes”

making Polenta at 2KASA Style with Chad and Brittany
recipe for 4 portion Polenta:
1/2 cup Polenta ( We used Florian Red Flint Corn, avail. at the Farmers Market)
2 cups boiling water
Taste to Salt
1/2 TBS butter
2 oz goat cheese (from Camino de Paz)
1 teesp Honey
Method:
1.) bring water to boil and add salt
2.) rapidly stir in polenta
3.) stir in butter and cook gently for
about 1:30
4.) take off heat and add cheese and honey
5.) add flavoring and taste for salt content
Trick:
after step 2, bring to boil and take off heat. Let sit at room temperature for 3 – 8 hours.
When ready to serve bring slowly up to temperature, add butter and simmer for 2 minutes than continue with step 4
