◆ Pending but exciting!!!!  Joe’s has applied for a liquor license.  Under the new regulations and designations we intend to acquire a Local Spirits Permit.  This designation fits hand-in-glove with our existing business model – serving local sustainable foods.  If all goes well, and it will, we’ll soon be able to make your favorite cocktails with whiskeys, rums, gins, vodkas and tequilas.  Our LOCAL distillers are Tumbleroot, Santa Fe Spirits and many more.  Wheeee!!!

I know you’ll ask, When?”  Like all questions recently, the answer is “Don’t know yet.”

 

It’s summer!  And this has been a fantastic year – in every sense of the word “fantastic”. My last newsletter was one year ago.  And boy have I received flac for the hiatus.  My excuse?  Processing.  Just like the rest of the human family, I have been processing, digesting and trying to make sense of the micro and macro picture of what has been transpiring since March 2020.  And much of my processing was unworthy of being shared.  However, what has emerged my thinking, my consciousness, my life is truly fantastic.  I awoke on March 16, 2020 with these words in my head, “This is a global re-set.”  The unfolding events were not very happy and I don’t think the challenges are over yet.  But what I see in the human family is a level of growth, inclusiveness, resilience and downright sturdiness that has taken a gigantic leap.  And we are forever changed.  Being forced to dig deep for emotional resources, to adapt to quantum speed change, to accept the unacceptable and to grow and expand has forever imprinted us with a globally-shared “growth spurt.”

That’s why I say it’s been a “fantastic” year.

◆ Dave and Loretta Fresquez (Monte Vista Organics) have again given us our annual tomato seedlings to grow at Joe’s.  They are doing just fine and you can watch the tomatoes growing on the patio.

 DiJa Know?  Tooth decay can be arrested and in some cases reversed with food (so says Dr. Ramiel Nagel in his book Cure Tooth Decay  Remineralize Cavities & Repair Your Teeth with Good Food.)  Who knew? Turns out that what grandma “made” us eat (bone broths, cod liver oil, liver, etc) was quite potent for maintaining health in general and possibly even teeth!  The loss of fat soluable nutrients and minerals in our diets due to the invasion of processed de-nuded foods has wrecked our health and our teeth.  Dr. Nagel basing his conclusions on his own patients’ histories, his own health issues and the foundational work of Dr. Weston Price, advocates consuming certain foods.  Like Hippocrates – “let food be thy medicine” Dr. Nagel suggests the following: fat soluble vitamins A, D and K, nutrient dense foods like grass-fed butter, pastured eggs, liver and other organ meats and seafood, cod liver oil, and dairy products from grass-fed animals.  The work of Dr. Weston Price (head of research at the National Dental Assoc in the last century) is legendary but Dr. Nagel takes it even further.  A good read if you are open to radical health ideas even the possibility of healing your cavities!

FYI – Joe’s has fabulous chicken liver pate and grass-fed and finshed beef liver and pastured organic eggs almost every day.  Just sayin’!

We’re not fans!  Emperor Gates has a new decree: “All rich countries should move to 100% synthetic beef by 2035.”  “But, the best argument is that everyone instinctively knows, genetically modified and synthetic Frankenfoods like the Impossible Burger simply aren’t good for us” states eco-nutritionist, Sara Keogh.  Sara is technical advisor for  Understanding Ag, and continues, “when consumers hear ‘plant-based‘ they assume that it’s healthy.”  In her report Plant-Based Meats and the Potential Harm to Human Health she shares what she teaches all of her clients: look at the ingredients.  “Upon  inspection, one could spot several questionable ingredients.  Soy or pea protein might raise a red flag for those concerned with autoimmune diseases, thyroid function, food allergies and digestive issues.  Oxidized plant oils high in inflammatory polyunsaturated fats, additives like methylcellulose, yeast extract, modified food starch, flavors, cultured dextrose and refined coconut oil are commonly found in ultra-processed foods and derived from laboratory manipulation.  Novel ingredients such as genetically engineered soy leghemoglobin, lack safety studies and could pose potential new health risks for consumers.”

Soy alone contains anti-nutrients, including:
•phytoestrogens, associated with some cancers and hormonal issues
•goitrogens that disrupt thyroid function
•lectins, implicated in autoimmune disorders and leaky gut
•phytic acid,  impedes mineral absorption
•trypsin inhibitors block digestion of proteins
•aquaporins, associated with neurodegenerative diseases (dememtia, Alzheimers)

This is why Joe’s does not offer soy milk or tofu.

Soy is just one of the Impossible Burger’s dangerous ingredients that Keough exposes in her reports.  Pea proteins have similar anti-nutrients.

I could go on and on, but you get the point – fake food-like substances (created in labs and convincingly promoted with huge marketing machines) are not understood by our bodies.  Routine ingestion of these substances leads to allergies and a multiplicity symptoms and in time, to debilitating diseases.  You cannot fool Mother Nature.  In millions of years our genetics have not changed. Certain nutrients are critical to our survival.  Those nutrients and micro-nutrients are simply not supplied by plants alone and most certainly not by lab-created “foods”.

 This is an important subject, worthy of repeating. For those of you who still fear fat, I love you but please stop it!

Hopefully this will help dissuade you of the notion that saturated fat causes heart disease.  It just isn’t true.

Mainstream advice has been dangerously off base advocating low fat and no fat diets.  Eating fat does not make you fat.  However, remember, we are referring only to the good fats: lard (that is not a mis-print) from organically raised animals, butter, ghee, coconut oil, olive oil.  The controversy over fat has more to do with politics and related economic interests than with solid science.  The science of fat metabolism is too complex to delve into here but the folloewing statements from eminent scientists, doctors and researchers are rather convincing.
The more saturated fat one ate, the more cholesterol one ate, the lower people’s serum cholesterol.  We found the people who ate the most cholesterol, the most saturated fat, the most calories weighed the least and were the most physically active.” Dr. Wm. Castilli Director of the Framingham (Mass.) Heart Study.
And from Dr. Mary Enig , world renowned lipids researcher, (I call her the queen of fats) “The idea that saturated fats cause heart disease is completely wrong, but it has been published so many times over the last 3 decades that it is very difficult to convince people otherwise unless they are willing to take the time to learn what produced the “anti saturated fat agenda”.
Michael Gurr, lipid biochemist says, “Whatever causes coronary heart disease, it is not primarily high intake of saturated fatty acids.”

 If you have dairy, egg and gluten sensitivities, and are craving that occasional chocolate treat, you must try our new brownies.  Oh my!  Be sure you ask for the gluten-free, egg-free brownies, because we make regular brownies from time to time.

 As customers returned this spring and summer, we couldn’t help but notice how many chose our Spaghetti special as their first returning to Joe’s meal!   Tuesday night tradition at Joe’s – it’s Spaghetti and Chianti Night.  $39 for two will get you Caesar Salad, Spaghetti with homemade Bolognese and a great ½ ltr of Chianti.  Wadda deal!  The Bolognese sauce is made with our grass-fed-and-finished beef.

 Another myth that diserves dispelling – salt is bad for you.  Hmmm. My opinion – in the heat of summer it is critical that we have sufficient salt (and other electrolytes, too) in our bodies.  Three studies published in the New England Journal of Medicinefound that people who consume between 3,000 and 6,000 milligrams of sodium* per day are measurably healthier than those who follow mainstream health advice.  People consuming less than that had a 27% increased risk of having a heart attack or stroke and dying from a cardiovascular event!  I know this contradicts our years of conditioning against salt.  But what’s equally important is making sure you’re getting enough of two other salts: magnesium and potassium (both found in small amounts in sea salt). Magnesium helps regulate blood pressure and decreases risk of cardiovascular disease. Potassium keeps your blood flowing and your muscles moving.  BTW – the shakers on your table at Joe’s are filled with sea salt.
*One tsp. salt = 2300 milligrams sodium.

  Joe’s will give you $10.  What’s the catch?  Well the way we figure it, if you cut out the middleman by NOT using a credit card, we can give that back to you and then some.  Credit cards cost the retail merchant about 3-5% and extra time & paperwork.  Now let’s be real – in today’s world one cannot function without one.  But there are a few (legal) alternatives that reduce our dependency on the Big Banks and actually save us all money.  We have a couple of suggestions: (1.) Joe’s Check List – If you are a “regular” and wish to pay by check, please ask your waiter to get you on the list.  (2.) Joe’s gift card – purchase  $100 gift card with cash or check or silver or gold coin, get a $10 free bonus! Your $100 gift card will actually buy you $110 worth of meals at Joe’s.

  • Law of gravity – any tool, bolt, earring or coin, when dropped, will roll to the least accessible corner.
  • Law of probability – the probability of being watched is proportional to the stupidity of your act.
  • Law of hurry – as soon as you change lanes in traffic or line in the supermarket, the one you were in will move faster.
  • Law of mechanics – when you try to prove to the mechanic that your car won’t work, it will.
    • Law of lockers – when only 2 people are in the locker room, their lockers are adjacent.
